Ingredients:
Chicken Drumsticks
Sweet Potatoes
Onions
Lemongrass
Coconut Milk
Seasonsing:
Curry Powder
Cayenne Pepper
Minced garlic (substitue: garlic powder)
Minced ginger
Water
Olive oil
Steps:
Wash and cut sweet potatoes into 1-inch cubes. Set aside.
Wash and cut lemongrass into four. Smash it so the flavor can come out. Set aside
Wash the chicken for.a few time. Dry it with napkin. Set aside.
Add olive oil in a big pot and add lemongrass once the pot is ready. Cook under medium-high heat for 1-2 minutes.
Add chicken into the pot. Season with curry powder, sea salt, ginger, cayenne pepper, and garlic. Cook under medium heat for 8-10 minutes.
Boil water in a separate pot. Set aside.
Add the first half of the coconut milk (the thick part) into the pot. Mix it thoroughly. cover with a lid, cook it for another 5-8 minutes.
Cut the onion into half. Peel them into separate pieces. Set aside.
Add sweet potatoes into the pot. Stir everything together well so that the sweet potatoes can absorb the curry flavor as well. Season everything again with sea salt. Cook under medium heat for 2-3 minutes.
Add boiled water in the pot. Cook under high heat until it boils. Let the curry simmer for 25-30 minutes.
Add onions to the curry. Let it simmer for another 10-15 minutes.
Add the second part of the coconut milk (the liquid part) into the curry. Mix it thoroughly. Continue to let it simmer for 10-15 more minutes.
